Okay, as I promised, here is the recipe for the pyrizhky. There are 3 stages of making the pyrizhky: dough, filling and making of pyrizhky. Since pyrizhky are small pies, so I’ll call them just pies 🙂
1. For dough, you need:
– flour: about 600-700 g
– warm milk (or water): 500 ml
– sugar: 30-40 g
– salt: 5 g
– dry yeasts: 10-12 g (1 package)
- Put all ingredients into a deep bowl and mix them thoroughly with a spoon.
- Add warm milk or water (temperature about 30 degrees) in small portions, mixing ingredients all the time. You need to get an elastic mass without lumps.
- Cover your dough with a towel and leave it in a warm place (22–25 degrees) for one hour. Because of yeast, the dough should grow by 2–3 times.
2. For the filling you need:
– potatoes: 3-4
– salt (for potatoes): about 3-5 g
– mushrooms (for example, champignons): 300-350 g
– onion: 1
– sunflower oil: 30-50 ml
- Finely chop onion and mushrooms and fry in sunflower oil. When the onion gets a golden color, stop frying and put it in a bowl.
- Peel the potatoes and cook mashed potatoes. Mix mashed potatoes and fried onion and mushrooms. The filling is ready.
3. Final part
- Sprinkle the table with flour and lay out the dough from the bowl. You need to gently knead the dough to make an elastic mass.
- Cut a piece of dough with the size of an egg from the total mass. Roll it to the size of the palm.
- In the center of this piece, put 1-2 tablespoons of the filling.
- Close this piece like an oyster, and tightly press the dough around the perimeter.
- After that, press the pie with your palm so that it becomes flat and thin (about 10 mm).
- Fry the pies in a pan with sunflower oil until you get a golden color. It’s about 1-2 mins for each side.
